School closings and graduation ceremonies are on for this week. Our community sends good wishes for good report cards, congratulations for excellence with awards and other achievements. Have a great summer vacation.
Canned sliced potatoes? Yes, the canned potatoes are ready to eat as they are partially cooked during the canning process. However, potatoes are best heated before serving, which enhances the flavor.
Every so often I will have a can or two and will try something different. Some brands will have a recipe on the label. Now, if potatoes are not the main star of your menu, canned potatoes will be good for the purpose.
Canned potatoes can be simmered in stews, potato soup or fried for a quick hash. I like the scallop potatoes au gratin (see recipe below). Always rinse and drain canned potatoes before using in the recipe. Use like any other potato. The canned whole potatoes (rather than sliced) are better when making a quick and easy potato salad. Just rinse and drain, dice and add salad ingredients and dressing, and it’s good.
My potato summary: If potatoes are one of your main entree items on the menu, certainly select fresh whole potatoes!
Monday, May 26, is Memorial Day, an official federal holiday. Many look forward to this three-day weekend.
Take a moment to reflect, remember and honor all the brave men and women who made the ultimate sacrifice for our country. Display the U.S. flag at half-staff until noon and raise to full staff for the rest of the day.

Easy Au gratin Potato
1 tsp. butter or margarine
1 tsp. flour
1 cup milk
1/8 teaspoon garlic powder
1 cup shredded cheddar or Swiss cheese, divided
2 cans sliced potatoes
Melt butter in a saucepan, blend in flour. Add milk gradually and cook, stirring constantly until thickened.
Add garlic powder and half cheese. Combine with potatoes, put in a 2-quart casserole baking dish and top with remaining cheese.
Bake at 375 degrees for 25 minutes or until golden brown and heated through. Garnish with green onions.
