It’s a time to be thankful, and prayerfully. Let’s get it done and enjoy the process. Take time to do meaningful planning so you won’t become over anxious.
The weather demanded wearing a coat a couple of days, at the beginning of the week. Frost on the ground white as snow, leaves falling like rain ... beautiful. Even more beautiful as the sun gradually warmed the earth.
Thanksgiving without sweet potatoes? Of course not! Every cook has a favorite sweet potato dish with a favorite topping. Marshmallows placed side by side to melt and brown all over are good and it seems effortless to prepare because it is quick, not counting marshmallows.
I like to do two toppings with one larger dish just for the presentation and choice. Of course, it is delicious, too!
Sweet potatoes, baked or boiled, start your favorite dish. If you boil potatoes, be sure to start potatoes in cold water, as this ensures the potatoes cook evenly from the outside, giving a perfectly tender potato every time.
Some think it’s quick to have the water boiling while peeling potatoes, but this way, when dropping in boiling water, the outside will cook faster than the inside and you have potatoes that are mushy outside and uncooked (firm) center. You don’t have to peel potatoes before cooking. Boil, steam or bake potatoes until done.
Shock boiled potatoes in cold water for a few seconds and let cool enough to handle, then pinch and pull skin off with your fingers or slit with a knife to loosen skin for peeling.

“Apple Pie Cinnamon Rolls,” “Cinnamon Roll Apple Pie” bake or casserole — whatever you call it — it’s good for breakfast with coffee, cold milk, hot chocolate or apple juice. It’s a dessert served in a dish topped with vanilla ice cream.
You will need 2 cans (21 ounces) of apple pie filling and 2 cans (17½ ounces) of large refrigerated cinnamon rolls with icing (chopped).
Confectioners’ sugar is optional.
Preheat the oven to 350. Place filling into a greased 9x13 baking dish. Cut each roll into 4 pieces and put over filling: stir gently to mix. Bake for 50-55 minutes. Serve warm. Garnish with confectioners’ sugar or icing. I made half the recipe.
Simply pour 1 can of pie filling (cherry or peach is good) in a mixing bowl, stir in chopped rolls and pour into a greased 9x9 baking pan. It’s quick to prepare and good when it’s baked.
You may also use canned biscuits, especially for breakfast; it just isn’t as sweet.
