As you all know, living in Mississippi, the weather is crazy! We can experience all four seasons in a 24- hour period. I bought a huge package of ground beef and decided to make several recipes that people had shared with me. I’m glad I did, because they are all absolutely delicious.
I try and keep plenty of ground beef and chicken in the freezer for quick meals. These recipes are quick and easy. I will make them again for my family. I hope y’all enjoy them as much as we did.
Cora's Sloppy Joe's
(Mrs. Cora Mills recipe)
2 pounds ground beef or chuck
1 medium onion chopped
2 jars Heinz chili sauce
Brown meat with onion and drain fat. Add chili sauce and simmer 15-20 minutes. Mix mayo and mustard together and spread on fresh buns and serve.
Cheeseburger Soup
1 pound ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
1/4 cup all purpose flour 2 cups of Velveeta processed cheese cubed
1 1/2 cups milk
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup sour cream
Brown ground beef in 3-quart sauce pan. Drain and set aside.
In the same saucepan, add 1 tablespoon butter and add onion, shredded carrots, parsley flakes, basil and celery. Sauté until tender.
Add the broth, potatoes and beef and bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.
In small skillet, melt remaining butter (3T) and add the flour. Cook and stir for 3-5 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Stir in the cheese, milk, salt and pepper. Cook and stir until the cheese melts. Remove from heat and blend in sour cream.
Impossible Cheeseburger Pie
1 pound ground beef
1 1/2 cups chopped onion
1 1/2 cups milk
3 eggs
3/4 cup Bisquick
1/2 teaspoon salt
1/4 teaspoon pepper
2 tomatoes
1 cup shredded cheddar cheese
Heat oven to 400 degrees. Grease pie plate 10 x 1-1/2. Brown beef and onions, drain. Spread in plate. Beat milk, eggs, baking mix, salt and pepper 15 seconds in blender on high or 1 minute with hand beater. Pour into greased plate. Bake 25 minutes. Top with tomatoes and cheese. Bake until knife comes out clean, 5 to 8 minutes. 6-8 servings.
