Well, Thanksgiving has rolled on by and we are now in the full throes of the Christmas season.
I used to be able to put up my tree(s) and all of my decorations during the week of Thanksgiving, but since I now host my family’s gathering, it puts me in a bit of a bind, trying to keep things tidy until the Thanksgiving feast is over.
Our family had a wonderful Thanksgiving evening meal, and, as always, we ate too much. Usually, we eat around noon. This year, I opted to serve the meal later.
I knew some family members might arrive early and, of course, they might get hungry while waiting so thought I would put together a couple of appetizers to tide us over.
The first one is a simple dip that I saw on a social media site. It’s a sweet dip. And let me say that if you enjoy too much of it, well, you will not want your supper.
Caramel Apple Dip is what it’s called, and here is the very simple recipe: Whip together two blocks of cream cheese with two cups of powered sugar. Spread into a shallow dish. Then drizzle caramel over the top, followed by crushed Heath bars on top. Serve with Granny Smith apple slices or graham crackers. It was yummy.
The second appetizer was also a dip. It was a home run with my crew. I made two batches and one was completely devoured. It’s called Hot Tomato Pie Dip. Don’t let the “hot” fool you. It’s not spicy hot, but, instead, it is out-of-the-oven hot. I suppose you could add a jalapeno if you want the heat.
Here is how I made it: Combine two blocks of cream cheese with one bag of shredded mozzarella cheese, one bag of shredded parmesan cheese, two cups of freshly diced tomatoes, 1/2 finely diced onion and basil (measure this with your heart). Put in the oven at 350 degrees and bake until hot and bubbly. Serve with crackers or crusty bread. Believe me when I tell you that it is out-of-this-world delicious.
Christmas decorations are popping up all over town and out in the country now. My tree is up but there are numerous bins and boxes stacked in the living room waiting on our attention.
But there will be no attention to decorations on Saturday, as those Charleston Tigers are headed to Hattiesburg for the state championship game and we will be headed there to cheer them on and offer coverage.
I commented to the hubs that by the time I get around to getting those Christmas decorations up, it will be time to take them down. Ha.
