Well, it’s cold and overcast outside. The kind of day you just want to stay in your pajamas and sit by a rolling fire, drink coffee, and read a good book. That’s exactly what I have been doing. I’m looking at the hardwood floor with all the dirt and debris on it and, you know what? It does not bother me as much as it should because I’m still sitting here.
I’ve actually become somewhat of a hermit during the colder, frostier months of the year. I can stay inside and always find something interesting to do. (Sit in front of the fire and read a book.) I am somewhat of a fastidious housekeeper. I always have my kitchen clean, and my bed made, and my bathroom cleaned. But today, the floor doesn’t seem to disturb me quite as much.
My husband, on the other hand, is one of those people who cannot sit still. He needs a day-to-day “mission.” He should have retired many years ago, but he still gets up at 6:30 a.m. every day, cooks our breakfast, wakes me up to eat, and begins his mission for the day.
Most days, it’s his checking all the big black cows, feeding our horse and his barn cats before he goes to his office to check on our grocery stores. He is an outside person and, yes, I am the procrastinator and enthusiast of lethargic.
Oh, don’t get me wrong, I still pull my weight in the chores I deem mine, such as cleaning and cooking a big meal every night. I joke and tell people my union only lets me cook once a day, so I choose to cook the dinner meal.
All of you who do most of the cooking, do you have a menu for the week, or do you just wing it as I do? I begin to think about what I’ll prepare for the next meal as I finish the current meal. I always ask my husband, “What do you want for supper?” He’s had the exact same answer for the past 63 years, “Whatever you want.” If that is true, I don’t understand why he won’t eat just a boiled egg or a ham sandwich instead of wanting a three-course meal. It’s a good thing that I do love to cook, or he just might sit down to one of my “surprises” some night as he has given me the “go” to cook what I want.
Sometimes, just not really often, I do get energetic and make a homemade dessert and he is surprised. I made the following one last night and he enjoyed my efforts.
AMAZING COCONUT PIE
1 cup white sugar
¼ cup self-rising flour
4 beaten eggs
one cup sweetened coconut
8 oz. of Pet milk
1 t. vanilla extract
Mix all together except for the coconut and then add the coconut last. Pour into a pie pan and bake for 50 minutes at 350 degrees.
