Warm and pleasant greetings to all.
We hope you are enjoying the week and getting adjusted to daylight saving time.
March came in with a roar of wind, rain and a few days of cooler weather, but seemingly everyone is adjusting.
This time next week will be the beginning of spring, the season many are looking forward to, knowing summer is next.
It’s time to peep into the closets, bins and other storage places to get in mind spring cleaning. We decide what to keep or discard for more refreshing space.
You may find in your sweet potato bin some potatoes beginning to sprout. This means they have passed their prime time.
While potatoes are safe to eat as the sprouts are not harmful, it does indicate it’s losing moisture. You can cut away the sprout and slip it in a jar or bowl with the roots only emerging in water. It will grow roots in a few days. You can plant the roots when it’s about an inch long or you can keep it in water and enjoy a pretty green plant. Sometimes you find sweet potatoes spongy. If so, I would discard.
Sweet potatoes are not good to eat if they are soft, have a foul odor, liquid leaking or have lots of sprouts.
March is Women’s History Month. The 2025 theme is “Moving Forward Together,” spotlighting women educating and inspiring generations (Wikipedia). This is a time to give all an opportunity to highlight and support women who dedicated their lives to education, mentorship and leadership to shape the minds and future of all generations.
Women still face many challenges.
We give encouragement to women as they reach new goals. Take time this month to reflect on women who have made significant contributions to society, how women are treated differently in the community and around the world and support women- owned businesses.
St. Patrick’s Day is Monday, March 17. Perhaps the color green will be the obvious color of clothing, foods and decorations. One of the obvious food dishes is corn beef and cabbage. We usually enjoy this dish on Saint Patrick’s Day. The slow cooker does a great job making this dish the easiest and tastiest. May the luck of the Irish be with you!
Enjoy life today. Be blessed.
