As we get excited about school closings, graduations and summer vacations, we celebrate Mother’s Day. It is with much love that we honor or remember our mothers on Sunday, May 11. Those of us who have memories to cherish, we do so in love. Our community sends love to all mothers as we embrace the memories, some for the first time, and honor for those we are blessed to celebrate.

Popovers? A popover is a light, airy pastry made with flour, eggs, milk and butter. Enjoy for breakfast, with a side meal or even a dessert.
Popovers are typically baked in muffin tins or popover pans, which have straight sides rather than angled. The popovers rise up high with a crispy outside and hollow inside. The batter rises and pops up. It’s a beautiful presentation. Freshly baked, they are simply a delight to bite into.
It’s been a while since I have made popovers and remember making them one year especially for Mother’s Day. I remember the very first time I made popovers. This was an individual assignment for my college Home Economics cooking class. Actually, I had never heard of this pastry, but I learned how to make them. I had to make this recipe three times before the teacher accepted the final outcome. It was an exciting experience for me. I was pleased that I was allowed to try the recipe this many times! This is more than likely why I don’t make them often. Think I may try making the recipe for Mother’s Day.
