It’s amazing how we (I) can find strength in the beauty of Earth’s nature. Just take the moments you need to begin the process. Not long ago, my nearby neighbor Eva called, and said “Look outside now and see how beautiful it is!” She was admiring and testifying with me as she was feeling blessed as she does every day.
The beauty coming from the sky is so refreshing. Sometimes not a cloud in the sky, another day clouds have formed into an elephant, steam, cotton candy, teddy bear or whatever with imagination. Obviously, you see it! One beauty tip I learned from my mother is to see and give praises in devotion to the Creator.
So many times, our mother expressed this thought as she went outside to tend the yard, garden or to leave the house. The birds pausing or flying, the trees, the fallen leaves, fruits and berries, anything growing along with nature she always found the beauty of it .
October is Breast Cancer Awareness Month. When we see the color pink, it reminds us of breast cancer awareness and those experiencing the effects, and families and individuals touched by this group of diseases.
Take some action. Awareness alone is not enough.

It’s harvest season and this time each year it’s exciting seeing crops gathered and transported. Sweet potatoes are among the familiar crops and families will be consuming their share. Sweet potatoes, of course, are better for consuming at least 2-3 weeks after harvesting. This waiting time cures the potato to improve its flavor. Starch in the potato converts to sugar making them sweeter and also heals the cut and scraped skin on the potato. Here’s a quick and easy recipe your family may enjoy.
Candied Sweet Potatoes
4 medium sweet potatoes, cooked and peeled
3 T. melted butter
½ cup light corn syrup mix with 1 t. Vanilla extract
1 T. lemon juice
½ t. grated lemon rind
Cut sweet potatoes into crosswise slices ½ inch thick; place in 1 quart casserole.
Combine remaining ingredients; mix well and pour over sweet potatoes. Bake at 375 degrees F for 30 minutes. Serves 4.
