Warm and pleasant greetings to all. We hope you are enjoying a good week.
A large silver leaf tree uprooted by the wind fell across Blue Cane Road last Wednesday morning. All was cleared quickly and traffic continued.
We certainly hope you enjoyed the Easter weekend. The weather was rainy, damp and cloudy, but spirits were high with the blessings of Easter time.
Hope the little ones could enjoy the egg hunt and found carrots growing in the (carrot) patch. The Easter coloring contest in the newspaper should have been fun for the young ones, too.
Eggs are a menu staple and served at any breakfast, lunch, dinner, supper or brunch meal or snack. For all practical purposes, most people like eggs in some form.
Ethan loves Granny’s scrambled eggs. Most everybody can scramble eggs, I suppose/hope.
You have your own way of preparation, but for scrambled eggs, I beat in sour cream instead of milk or water. It makes the eggs light and fluffy and good, too. Start skillet on medium heat. You want the eggs to begin cooking when poured in skillet. When your spatula leaves a path through the eggs, reduce the heat to low and continue cooking until done, a minute or less more.
I also like to use solid Crisco, but oil is OK. Cast iron or coated skillets work well. (No, Ethan didn’t come to his grandparents for Easter.)
I enjoy the AARP magazine each month. The magazine is informative, entertaining and refreshing.
I think sometimes, “I once knew that.”
If you have not made French toast in a while, try this recipe for breakfast or brunch.
Prepare French toast when you have time to enjoy. Husbands or children can easily prepare this for a toast to Mom.
You will need 4 to 6 thick slices of bread. I like the Texas Toast or French bread. Regular sliced loaf bread is good.
Mix 4 large eggs, ½ cup heavy cream and one tablespoon of sugar. Flavor with vanilla, almond or maple extract plus spices such as cinnamon or cardamon.
Heat skillet to medium heat and grease with butter or oil before you add the batter-soaked bread. When the bottom of toast is golden brown, flip and cook until it’s a similar brown and done.
Serve with favorite syrup, whipped topping, powder, sugar or fruit.
Enjoy life today. Be blessed.
