We hope the first week of school went well, as everyone is aware of being cautious with traffic and children in motion. Grandson Ethan is a high school junior now and getting his credentials to drive to school. Our community sends good wishes to all students, teachers and staff. Be safe, healthy and have many exciting learning experiences.
Last week was quite warm with the week beginning with triple-digit temperatures. However, the temperature was quite refreshing by the middle of the week, ending with lower temperatures. It was somewhat uncomfortable for residents in our community for a couple of nights.
Monday and Tuesday nights were very dark, with the electric power out for five to six hours beginning around 7:30 nightly. The extreme heat temperatures caused overload on the power, causing the outage.
Here’s a quick “light” hack my sister-in-law uses whenever needed. When there’s a power outage, she steps outside and gets a solar bulb or two from her sidewalk. It makes light enough to brighten the complete darkness. So now I keep a couple outside just for that purpose. You can also place the light in front of a mirror and get a more reflective light.
Did anybody tell you eggplant is good for you?
Eggplant is a warm season crop. Many times eggplant is included in the summer food bag distributions and in grocery stores. I like eggplant. Some people say they “love it.” This purple vegetable has antioxidants like vitamins A and C, which help protect your cells against damage. It’s also high in natural plant chemicals, called polyphenols, which may help cells do a better job in processing sugar, if you have diabetes.
Eggplant can be steamed, grilled, braised, stir fried, deep fried and roasted. I most always make eggplant casserole like the dish we used to get at Piccadilly. The first time or two we ordered, we selected the dish asking for stuffing/dressing and then another time the waiter told us this was eggplant casserole. We would select it every time. My family still likes the eggplant casserole. Eggplant is certainly one vegetable you may want to try if you want something different.
Eggplant can be stored fresh in the fridge between 5-7 days, so you have time to decide how you would like to prepare your eggplant. I made the Eggplant Spaghetti Sauce that Patcie Deck had with her article last week in Tillatoba News. I had fresh tomatoes I used instead of plum tomatoes, which I’m sure makes a pretty presentation, but could not taste any better!
