Welcome to spring! The official first day of spring for 2025 was Thursday, March 20. Let the allergies begin.
The wind has been perfect to fly kites. Ask little Hallie Deloach and she can tell you how much fun it is. Hallie is a true li’l farm girl who likes to feed the cows, water the garden, gather eggs and pick a basket of flowers.
These allergies are about to do us in, says Lila Myrick. She said they haven’t done much of anything lately. They are bad on us too, Lila.
Stephen and Emily Tillman Donovan are proud of their girl, Alice, for placing first at the District Art Competition! Now, on to state! You have made it this far, Alice, now bring it on home!
I texted Gloria Marceleno late Sunday afternoon and she was in her bathroom waiting on the tornado. Said she was trying to stay home as much as possible since she’s having health issues. She said Lynn fell back in October and November and it did a number on her neck/spine. She is in so much intense pain. They are setting up an appointment for her with a neurosurgeon and ENT. Prayers for healing for you, Lynn.
Kristie Hartley went with Annie Box and her family to Houston, Texas, to the rodeo and to visit Annie’s brother and wife.
Faye Hartley and Nathan, Rowland, Mary Brett and Mclendon Hartley spent the weekend in Starkville with Rowland playing ball.
Sadie Harper said, “I wish I could say I felt good but, I’ve got sciatica nerve problem on my left side and hope I can go and get a steroid shot Monday.”
Sadie’s better half, Milton, is doing really good and the discharge date is Friday March 28. Sadie said she prays he can come home that day. I hope so too, Sadie.
Martha Box looks forward to Mondays when son Ben comes by to check on her and to do some heavy chores and talk. When Martha is able to fully stand and go out again, she said she will be shouting “Glory to the Lord for all He has sent me to see me through!”
Martha said she is hoping to start standing and walking at her next checkup on April 3, as well as doing a lot of jobs her place needs. It is spring, and time to plant those maters and cucumbers, said Martha.
Cossar Park had a great turnout Wednesday and will be having their next bingo April 16 from 2-4. They have bingo every third Wednesday of the month
Waylon Dukes and daughter Haven Rose, and Sam Pullen and daughter Jo, had “Doughnuts with Dad” last week at school. They also had “Muffins with Mom,” all at North Delta.
Deborah McCool said her husband, Tommy, came with her to work Friday and spent the day, taking her to lunch. On Saturday, they went to Leland and spent the day with Tommy’s sisters.
Ginger Harrison said they had a great weekend. She and Phil visited a few yard sales and stopped by the Casey Jones Music Fest in Water Valley, where Josh met them for lunch. It was a beautiful day to be out and they took a good, long afternoon nap. On Sunday, Diane Hill made a fabulous early birthday lunch for Ginger. “She knows I love her chicken and dumplings,” said Ginger. “She also made me a Butterfinger cake and, of course, it was delicious.” They visited her mama (Martha Box) Sunday evening. Ginger said it was great to see her getting around a bit. I say you can’t keep a good woman down, Ginger!

Recipe for the week: “Apple Skillet pancake”
Ingredients
1 cup cake flour
2 tablespoons granulated sugar
Pinch of salt
1 tablespoon baking soda
1 tablespoon baking powder
2 eggs, whole and beaten until light
2 tablespoons melted butter
2 cups buttermilk
2 Granny Smith apples
1 1⁄2 cups heavy cream
1⁄4 cup granulated sugar
1⁄4 teaspoon vanilla extract
powdered sugar
Directions: To prepare the pancake batter, sift the cake flour, 2 tablespoons of granulated sugar, baking soda and baking powder. Then, combine the eggs, melted butter and buttermilk into the dry ingredients. Reserve for cooking.
Cut the apples into eight even pieces. Remove the seeds and place into water until ready to cook.
Combine the heavy cream, 1/4 cup granulated sugar and vanilla extract and whip on medium speed until stiff peaks are formed. Reserve for finishing.
Cooking: In a 10-inch nonstick pan, add 2 tablespoons of sugar to preheated pan and lightly caramelize (turns golden brown). Remove apples from water, dry and add to pan. Arrange in a circular pattern. Add 1 cup of pancake batter and place into a preheated oven at 350° F for 18 minutes.
Remove after 18 minutes and allow to sit for one minute in pan. Then place a plate large enough to fit over the pan. Flip over the pan and the pancake should fall onto the plate.
Dust with powdered sugar and place a large dollop of whipped cream on top.
