It’s November. Bountiful blessings and Thanksgiving are the themes as we turn our calendars to November.
It’s the season we think of reuniting family and friends, sharing and enjoying a meal and, of course, giving thanks.

Yes, cooking is just one thing I enjoy doing (well). Seasonably and reasonably pecans and other nuts will be a popular ingredient for the holiday cooking. I agree with many other cooks that you should always toast nuts before baking or adding to other foods. Toasting improves their flavor, texture and aroma. Toasting releases the oils, improving their texture and making them stay crisp in baked goods and salads.
I always toast any kind of nuts before eating. You can do a dry roast or toss nuts with a bit of oil before placing an even layer on parchment paper or a microwaveable plate. Microwave one minute at a time until toasted, not more than 3-5 minutes.
Monday, Nov. 11, is a federal holiday remembering veterans. “A Legacy of Loyalty and Service” is the theme for this year’s Veterans Day. We salute our veterans in honoring all U.S. armed forces. Veterans Day is celebrated in honoring American veterans for their patriotism, love for their country and willingness to serve and sacrifice for the common good.
This is a good day to display the American flag. You may want to give allegiance to the flag in honor of this day. Why not? When have you last repeated this pledge? We extend our heartfelt gratitude to all veterans in and around our communities and across the nation for their selflessness and we recognize the sacrifices they make — Marines, Sailors, Airmen, Guardsmen and Coast Guardsmen. We remember family members these men and women leave back home while they sacrifice their lives for our country. My father, husband and brother-in-law are special servicemen.
We are in acceptance with this prayer: “Dear Lord, today we honor our veterans, worthy men and women who gave their best when they were called upon to serve and protect their country. Bless them for their unselfish service in the continual struggle to preserve our freedoms, our safety and our country’s heritage, for all of us.”
