With these wonderful cool days, I was craving chicken and dressing Sunday morning, so I got up and with David’s help, we made a delicious 9x13 dish of chicken and dressing. Daughter Donna Garripoli and son Tim Sullivan helped us put a big dent in it. I had a bag of cranberries, so I made some fresh cranberry sauce. Candied yams and English peas topped it all off!
Joey and Katelyn McClanahan and Brandon McClanahan visited Lila and Gerri Myrick Sunday. They also visited with other family members. They had fun fishing Saturday with Bobby Joe McClanahan.
My friend Lisa Havens is showing out with some beautiful crochet pieces. I have had my crochet thread stashed back for a while, but after seeing some of the things she has made, I got mine back out and am doing pretty good with light colors. But with dark colors, I have to have a magnifying glass and a good light. I’m working on two different afghans and hope to finish them soon. Thanks, Lisa, for inspiring me.
Martha Box had a great drive out to her brother Ronnie Wortham’s home in Palestine, Texas. Sister Joyce Stevens and daughter Candy Box kept her going and coming! She said she sure enjoyed all the family and friends gathered at Ronnie’s. Jesse Wortham and Wyatt went in their car, too. Talk about racing to beat us women. Well, they did by just a little. Ronnie's crew cooked up a good crayfish boil! Best part of all was the gathering. Lot of great music! Martha and the kids did a bit of shimmy shake and slow dancing! She said she missed church but talked and shared Jesus with several.
Waylon and Holly Dukes took their children, Haven Rose and Waylon Jr., to the movie place in Grenada Sunday afternoon to see the movie “The Super Mario Galaxy.”
Celebrating birthdays this week are Tootie Billingsley on the 22nd, Louise Arnold and Bobby Epps on the 23rd, Jennifer Bowman on the 24th, Linda Robinson Colton on the 26th, Mary Ann Carpenter on the 27th, Tim Little on the 28th, and Renee DeLancey on the 30th. Recipe for the week: Banana Bundt Cake
Cake ingredients:
1 box yellow cake mix
1 small box instant banana cream Jello
4 eggs (large), lightly beaten
1 cup water
3 Tbs. sour cream
¼ cup canola oil
1 cup bananas, mashed over-ripe, (about 2)
Frosting ingredients:
4 ounces cream cheese, softened
1½ cups powdered sugar
Dash of vanilla
Dash of heavy cream
Preheat oven to 350℉ with rack on the lower-middle position so the cake isn't too high in the oven.
Grease and flour a Bundt pan and set aside. In a large mixing bowl, combine cake mix and instant pudding mix. Whisk to combine.
Add eggs, water, sour cream and oil. Whisk just until incorporated.
Using rubber spatula, fold in bananas just until combined; don’t over-mix. Pour into prepared bundt pan, lightly shaking to even out the batter. Bake 35-45 minutes, watching for the top to be lightly golden and it to pass the toothpick test. Remove from oven and Cool completely in pan on rack. Once cool, use a knife to separate cake from pan. Invert and remove cake to a platter.
For the Frosting
Using a hand mixer and a big bowl, whip the cream cheese until soft. Add remaining ingredients and mix until smooth. Drizzle over cake.
